Kona coffee dries on the hoshidana (coffee drying platform) at the Kona Coffee Living History Farm. After being pulped in the mill coffee is raked and spread on the drying platform which was an innovation in Kona with its movable roof. During sunny days the roof was pushed back to reveal the coffee and when it rained the roof was moved to protect the coffee beans. This is part of the Kona Historical Sociey.
